Ingredients

Base and crumble

  • 450 g wheat flour
  • 3 tsp baking powder
  • 160 g sugar
  • 2 medium eggs
  • 200 g softened butter

Apple filling

  • 800 g apples (weighed whole, before peeling)
  • 1 tbsp lemon juice
  • 40 g sugar
  • 1 tsp ground cinnamon (optional)

Method

  1. Step 1

    Ingredients for this step

    • 450 g wheat flour
    • 3 tsp baking powder
    • 160 g sugar
    • 2 medium eggs
    • 200 g softened butter

Line the base of a 26 cm springform pan with baking paper; lightly grease and flour the sides. Knead the flour, baking powder, sugar, eggs and softened butter into a crumbly dough. If time allows, wrap and chill for about 15 minutes.

  2. Step 2

    Ingredients for this step

    No additional ingredients

Set aside about one third of the dough for the topping and keep it cool. Roll the remaining two thirds out slightly larger than the pan, or press it directly into the pan to form a base and raised edge.

  3. Step 3

    Ingredients for this step

    • 800 g apples (weighed whole, before peeling)
    • 1 tbsp lemon juice
    • 40 g sugar
    • 1 tsp ground cinnamon (optional)

Preheat the oven to 180°C conventional heat. Peel, core and dice the apples. Toss with the lemon juice, sugar and optional cinnamon, then spread evenly over the base.

  4. Step 4

    Ingredients for this step

    No additional ingredients

Crumble the reserved dough over the apples. Bake for about 55 minutes, covering towards the end if the top browns too quickly. Let the cake cool in the pan before releasing it so the slices hold together.
